I made these in the shape of paves, which require less work. They went down a treat with everyone I've shared them with! The recipe can easily be halved (or doubled :))

Ingredients

Truffle ganache
  • 400g dark chocolate 60-70% cocoa content, finely chopped
  • 100ml heavy cream
  • 100g sugar
  • 50-100ml extra virgin olive oil
  • 2 tsp vanilla paste or the seeds of 1 vanilla bean, scraped
  • 1 tsp salt
To decorate
  • 3-4 tbsp cocoa powder, preferably Dutch processed

Instructions

Make the truffle ganache
  1. These truffles are super duper easy to make!
  2. Start by warming the heavy cream with the sugar and salt until they dissolve.
  3. Place the chocolate in a large bowl. Pour over the hot cream mixture.
  4. Mix well until chocolate melts.
  5. Add olive oil and vanilla, mix well.
  6. Pour the ganache into a shallow square pan, lined with parchment paper.
  7. Chill in the fridge for at least 4 hours or ideally overnight.
  8. When ready to serve, cut into equal size pieces.
  9. Place cocoa powder in a shallow, large plate.
  10. Dust ganache pieces with cocoa powder until well covered.
  11. Keep chilled in sealed bags or an airtight container for up to two weeks.
