I made these in the shape of paves, which require less work. They went down a treat with everyone I've shared them with! The recipe can easily be halved (or doubled :))
Ingredients
Truffle ganache
- 400g dark chocolate 60-70% cocoa content, finely chopped
- 100ml heavy cream
- 100g sugar
- 50-100ml extra virgin olive oil
- 2 tsp vanilla paste or the seeds of 1 vanilla bean, scraped
- 1 tsp salt
To decorate
- 3-4 tbsp cocoa powder, preferably Dutch processed
Instructions
Make the truffle ganache
- These truffles are super duper easy to make!
- Start by warming the heavy cream with the sugar and salt until they dissolve.
- Place the chocolate in a large bowl. Pour over the hot cream mixture.
- Mix well until chocolate melts.
- Add olive oil and vanilla, mix well.
- Pour the ganache into a shallow square pan, lined with parchment paper.
- Chill in the fridge for at least 4 hours or ideally overnight.
- When ready to serve, cut into equal size pieces.
- Place cocoa powder in a shallow, large plate.
- Dust ganache pieces with cocoa powder until well covered.
- Keep chilled in sealed bags or an airtight container for up to two weeks.
