Nutella Filled French Toast

You'd think French toast would be decadent enough without the sinful addition of a chocolate hazelnut spread in the middle, which would melt and ooze when cut and, with the addition of cinnamon sugar, become almost like a fluffy, delicious churro on your breakfast table.

I used brioche bread here for extra fluff but you can use any good quality bread you have, preferably not very fresh. After all, pain perdu, the French version of this, means “lost bread” - using the bread that would have otherwise gone to waste. A drier crumb means the bread will absorb the egg better but also will not become soggy and lose its structure.

After trying this original recipe, feel free to make changes as you see fit: use your favourite jam or nut spread (PB&J? why not?), sprinkle other spices such as a bit of nutmeg or a dash of cardamom, or even go savoury (omit the sugar and vanilla) with cheese inside?

Nutella Stuffed French Toast

Ingredients

  • 4 thick slices pf brioche bread
  • 4 tbsp pf Nutella (or, to taste)
  • 1 egg, beaten
  • 2 tbsp heavy cream or milk
  • splash of vanilla extract
  • 1 tbsp sugar
  • tiny pinch of salt
  • butter, for frying
To serve
  • 2 tbsp sugar mixed with 1/2 tsp cinnamon
  • greek yoghurt or crème fraîche

Instructions

  1. Start by cutting the brioche in 4 thick slices.
  2. Spread 2 of them generously with Nutella or another chocolate hazelnut spread.
  3. Preheat the oven at 180 degrees C
  4. In a shallow, large dish combine the beaten egg, heavy cream or milk, sugar, salt and vanilla. Mix thoroughly.
  5. Sandwich the Nutella brioche slices with the empty ones, pressing lightly to create a seal
  6. Gently dip the formed sandwiches in the egg mixture. Coat all sides well.
  7. Place a large pan on medium heat. Add the butter and wait until it melts and starts bubbling.
  8. Fry the French toast in the pan on a medium-low heat until beautifully golden on both sides, about 4-5 minutes. Transfer to the warm oven and let finish baking another 10 minutes.
  9. Make the cinnamon sugar by mixi ng the sugar and cinnamon in a small bowl
  10. To serve, sprinkle with cinnamon sugar and yoghurt, add some fresh fruit for health :)
  11. Devour immediately!
