Chocolate Bourbon Sauce
This chocolate bourbon sauce recipe is a riff on my favourite chocolate hot fudge sauce, with an extra boozy kick. It came about when I was complaining that the Mc Donald's sundaes in Switzerland have a different sauce than in the rest of the world which is, to me, inferior. I therefore set out to make my own, as I was craving the glossy, chewy kind of chocolate fudge sauce we all know and love.
The bourbon add-on? Takes it over the top.
Drizzle it over ice cream, cakes, whipped cream, fresh fruit, or anything your little heart desires that could benefit from an extra layer of indulgence.
With just a few simple ingredients, you can make this rich chocolate sauce in under 10 minutes. It’s basically all a matter of stirring the ingredients and letting them combine over gentle heat. Lastly add the chocolate, alcohol and salt and there you have it: perfect chocolate sauce.
I recommend sourcing the golden syrup for this recipe as it gives it its incredible texture. Honey will be similar but will also impart a bit of its own flavour.
Regarding the alcohol, any strong liquor will do such as whisky or rum, but also something milder like a crème de cacao or Irish cream would work incredibly well. I suggest you start by adding 1/2 tbsp at first then taste and adjust the alcohol quantity, depending on how strong you’d like the flavour to be.

CHOCOLATE BOURBON SAUCE
ingredients (makes 1 cup)
15 grams unsalted butter
70ml heavy or whipping cream
80ml golden syrup (honey works as a substitute but will impart a subtle flavour)
25g brown sugar
10 grams cocoa powder
pinch sea salt
100g dark chocolate (60-70% cocoa), chopped
1/2-1tbsp bourbon or other strong alcohol such as whisky or rum, depending on how strong you would like the taste to be
In a medium saucepan add all the ingredients up to cocoa powder: butter, heavy cream, golden syrup, brown sugar, cocoa powder. Mix well.
Set over medium heat and stir until the combine. In a few minutes the sauce should become glossy and slowly start thickening. Once it reaches the desired consistency, take off the heat and stir in the chocolate, bourbon and salt. Leave to cool then drizzle ti to your heart’s content over basically anything and everything. At least it’s what i do :)
This sauce keeps very well in the fridge, up to one month (never lasted so long in this household, though).
