Almond Pear Scones

Sweet pear and dark chocolate combine with the delicate almond flavour of these scones for a perfect afternoon treat
Ingredients
- 2 pears, peeled, cored and chopped into chunks (make sure they’re moderately firm)
- 100g dark chocolate, chopped into chunks
- handful of almond flakes
- 60g sugar
- 200g flour
- 1 1/2 tsp baking powder
- 1/2 tsp salt
- 85g unsalted butter, cubed
- 60ml heavy cream, plus extra for glazing
- 1 egg
- 1/2 tsp vanilla extract or 1/4 tsp almond extract
Instructions
- Preheat the oven to 190 degrees C.
- In the bowl of a food processor, combine flour, sugar, salt, baking powder. Pulse to combine.
- Add the butter chunks, pulse until mixture resembles wet sand.
- Add the egg, vanilla/almond extract and heavy cream, pulse until the dough just comes together, as little as possible.
- Tip onto a floured surface and add in the chocolate and pear chunks. You want to process the dough as little as possible, so try distribute the add-ins more by pushing them into the dough, rather than properly mixing/kneading.
- Shape the dough into a disc (roughly 2.2 cm tall) and cut it like a pizza, in 8 scones.
- Place them on a tray lined with parchment paper, evenly spaced (leave about 3 cm between them).
- Glaze with the heavy cream and sprinkle the almond flakes on top.
- Bake for 25-30 minutes, until beautifully golden brown.
- Take the scones out of the oven and let them cool for a few minutes before digging in. I can never manage too long!
Notes
Apples would work really well here, you can add some cinnamon to the dough and replace the dark chocolate by milk or white.
